HAVE YOU EVER WONDERED WHAT IS THE DIFFERENCE BETWEEN JAMS, JELLIES, PRESERVES, MARMALADES AND BUTTERS???? OUR CUSTOMERS OFTEN ASK US. The basic difference between a jam and a jelly is that jelly is made from the juice of the fruit only. The fruit is crushed and strained, then boiled with sugar and pectin to make a spreadable product. Jam is crushed fruit with the seeds left in. The result is somewhat lumpy as the whole fruit is still in it. A jam is not much different than a preserve. A preserve is a term meaning that the fruit is actually preserved through a canning process. A marmalade is actually a preserve made from the fruit pulp and citrus rind. Butters are cooked down fruit that is run through sieves to strain out any whole pieces. It is then whipped to a smooth consistency.
